Pesto Linguini with Grilled Shrimp
I taught my hubby how to make pesto and he says he thinks he can add it to his repertoire. This is an easy 5 ingredient version for anybody who is intimidated by sauces.
In a food processor, about 1/2 cup grated parmesan reggiano cheese & 1/2 cup toasted pistachios. Pulse. Then add 1 crushed garlic clove, 1 cup of fresh basil leaves, salt and pepper. Pulse and add a drizzle of olive oil, about 1/4 to 1/2 cup.
Meanwhile boil water for pasta and cook pasta noodles.
Marinate shrimp in lemon juice, olive oil, crushed garlic, crushed red pepper flakes (to taste) and salt and pepper. Heat grill pan to high. Grill shrimps for 1 minute on the first side and less than a minute on the second, until just cooked. They turn rubbery if you overcook them and continue to cook a little when they come off, so don’t walk away.
Toss noodles with pesto and serve with grilled shrimp, salt and pepper and lemon wedges. Yummy!!
